They know everything about every customer. Your habits, what times you tend to come in and what you prefer. And they dont want to share.
Obviously information is being shared between them, since they like to keep "their" customers to themselves. This was seriously annoying at the old Sakura. Getting the variety could be difficult at times when girls are possessive.
