guide to ID screening for Bay Area

noob question. I tried looking throughout the forum but couldn't find any information on this.

specifically,

1.) What is normally required for ID verification in the bay?
2.) I saw one thread that said they ask for driver's license and work stub. I'd be weary to give those to strangers. What can you black out?
3.) Isn't it worrisome that someone has all your info? They can easily use it for extortion.

For 2 -- if you black out things, you at least need the name to show on the ID and the work stub so they match.
