I have actually seen the process of making these in my grandmother's home village some place east of Guangzhou. Put me off of them for a while because the fresh coat mixture was so pungent that it burned my eyes and nose hairs. I have also seen them make Chinese sausage, that shit really put me off of Chinese sausage for a year, it is absolutely filthy! Luckily I get to eat American made Chinese sausage here where it has to go through a vigorous US government inspection. Yes, US food inspections are the best and NO ONE can prove to me otherwise and NO I will not look at any statistics because the food in the US is always clean. Ignorance is bliss.
Your American made sausages might be clean but I doubt they taste better than the Wing Wah sausages from Hong Kong.
