Yes for both experiences the masseuse prefer e-transfer over cash or pay at counter.  If you pay at counter they have to split with the house.

I realize now why you can't e-transfer at spas, but okay in the saunas.  The women at the sauna have legitimate visas in HK and can work as a masseuse, vs most girls in spas come from mainland illegally or temporarily without right to work.
