Itinerary for 3-hour stop-over or longer

Remade it ...

since this is a common question, might be worth making it a sticky - this is an achievable itinerary that can be achieved in a 3.5 hour stopover or longer.  Use it as a baseline for your own planning and preferences - 123 Bonham Strand is not quite the closest address to Hong Kong station but IMHO you get a better choice better price and better service.  If you prefer Kam Bong building which is here or 6 Mercer St, they are also good choices and the same timeframe works.

On reflection, Google's directions aren't too smart for the walking route ... great for the destination of course ... the best route from Hong Kong station to any of the SW addresses is the following:-
Exit from the train, go through the ticket barrier, and turn right to go up the escalators
Continue up the escalator train to IFC mall, you'll see McDonald's to your right
Turn left past the Customer Service / Information booth, towards One IFC
Go around One IFC and exit on the walkway to cross Connaught Rd (this is the 3rd exit past One IFC, the first being to Four Seasons Hotel, the next being to Macau Ferry Terminal)
Cross Connaught Rd on the walkway, and continue straight through the next building.
Cross the next road (Des Voeux Rd) and continue straight through the next building (which is the disused Central Market)
As you exit from Central Market, take the stairway down to ground level on Queen's Rd and turn West towards Sheung Wan

This will take you straight past Peel St, Wing Kut st (Kam Bong), into Bonham Strand which in turn goes past Mercer St and all the way up to 123 Bonham Strand following a dedicated pedestrian route.

[Note: I've noticed and corrected a mistake, the devil is in the details, making it a 3.5 hour stop-over]
